“Chefs Michael Hudman and Andrew Ticer are stepping out of Brookhaven Circle for the first time to expand their restaurant interests, with a new concept – their fourth – planned for Carlisle Corp.’s The Chisca on Main.
Catherine and Mary’s, named for the pair’s grandmothers Catherine Chiozza and Mary Spinosa, will join LYFE Kitchen on the first level of The Chisca and offer traditional Italian cooking through the lens of the American South. It will feature pastas, open-fire cooking and an ambience inspired by the building’s historic interior.
Chef Ryan Jenniges, former chef de cuisine of Andrew Michael Italian Kitchen, will run the kitchen.
It’s a homecoming of sorts for Hudman and Ticer, who cut their teeth as sous chefs at Downtown restaurants (Chez Phillipe and Encore). Their plan for The Chisca, according to the pair, is a culmination of a desire they’ve had for a while to launch a restaurant Downtown.
They also plan to continue to work with local farms, such as Hana Farm, Woodson Ridge Farms for their produce and Newman’s Farm and Claybrook Farms for their meats, sourced and cut through Porcellino’s Craft butcher.
The new 5,000-square-foot Downtown eatery is also both a continuation of and an expansion of the chefs’ veritable restaurant empire they’ve established over the last several years along Brookhaven Circle in East Memphis.
