MBJ: Memphis taco shop announces new location, complete with drive-thru
A local Mexican restaurant with a Southern California flare is ready for location No. 2.
Elena’s Taco Shop signed a lease for 2,500 square feet of space at 8610 Ricky Bell Cove, near the Best Western hotel in the Wolfchase corridor.
A former fast food restaurant, the building will have a drive-thru, and unlike its first location at 6105 Summer Ave., it will also have a bar.
Gonzalez said once the restaurant is established, they might keep the drive-thru open 24 hours a day, seven days a week. He anticipates they will need to hire 20 to 30 people to staff the operation.
Elena’s opened in Memphis about three years ago, and with the new drive-thru location on the way, Gonzalez said someday he hopes the company has a Chick-fil-A effect, where you can find an Elena’s Taco Shop anywhere in the country.
“The people in Memphis just love us,” Gonzalez said. “They keep coming and coming, and really [we] only got popular over word of mouth — we haven’t really done any advertisement.”
